This recipe, which comes to us from the Near East, is a typical preparation of Arab gastronomy, and is then well known in the Mediterranean areas as well as in the Middle East.

Ancient Egypt, an ancient civilization in North Africa, is believed to be the origin of this dish. The term  hummus means chickpeas in Arabic.

Ingredients

  • 1/2 lemon for its juice
  • 1 tablespoon of salt (5 g)
  • 1/4 cup lukewarm water (50 mL)
  • 2 tablespoons of tahini  (30 g)
  • 2 cloves garlic
  • Olive oil
  • 1 cup of cooked chickpeas (500g)
  • 1 tablespoon of ground cumin (5 g)
  • 2 tablespoons of olive oil (30 ml)
  • As a decoration: parsley or sweet pepper powder
  • Optional condiments: caraway, coriander

Preparation

  1. Immerse the chickpeas in a bowl of lukewarm water. It is essential that the chickpeas are completely under water. Let it sit for at least an hour, so that the skin falls off.
  2. When the indicated time has elapsed, separate the chickpeas and the skins. Keep some water.
  3. Mash the chickpeas with an electric mixer.
  4. Crush the fresh garlic cloves.
  5. Squeeze half a lemon (choose a small lemon). Pour the juice over the chickpeas.
  6. Put all the ingredients in a bowl. Beat with an electric mixer at medium speed while pouring a drizzle of olive oil on the mixture.
  7. Once it’s ready, taste your preparation and adjust the seasoning if you feel it is necessary.

Tahini recipe

Tahini is a sesame cream. Like hummus, this preparation is a healthy and delicious appetizer.

Ingredients

  • 1 pinch of salt
  • 2 tablespoons of sesame seeds (30 g)
  • 1 tablespoon of water (15 ml)
  • 1 tablespoon of olive oil (15 ml)

Preparation

  1. Rinse the sesame seeds thoroughly with water. Wring out well.
  2. If the seeds are not toasted, toast them in a skillet over high heat. This step is important, as it will intensify the taste of the seeds.
  3. Place the seeds in a bowl. Add olive oil, water and a pinch of salt. Beat. Repeat the operation until you obtain a smooth paste.

The secret of this hummus preparation lies in the moderate use of olive oil. The less oil you use, the better.

As for its conservation, it should be kept in a cool place. After three days, this preparation will no longer be good, because it does not contain preservatives.

You can prepare a hot variation by adding three tablespoons of ground pepper or cayenne pepper. Some add a pinch of black pepper to enhance the taste. It will depend on your taste.
