Cover the cakes with decorative cream

Preparation

  1. Place the milk in a saucepan and cook it over low heat.
  2. Add the sugar to the milk and the lemon zest. Remove from the heat to mix the ingredients well.
  3. In another bowl, mix the egg yolks with the cornstarch.
  4. Once the milk begins to boil, pour this mixture into the bowl of yolks and cornstarch.
  5. When you have mixed well, place this mixture on low heat and beat until you get a thick cream.
  6. Finally, add the vanilla essence and stir vigorously. Let cool and you are ready to apply the cream to your cake.
  7. When you are ready, place the cake on a stable surface. With a wooden spoon, spread the cream over the entire surface of the cake. Then, using a spatula, mold the cream around your cake in the desired shape.

You will probably find that your cake looks very sober with the white cream. But you can use vegetable dyes to add a more personal touch to the cake. Suppose the cream is blue and above you scatter sparks of color, or sliced almonds: the result will, without a doubt, be magnificent.

Select the colors you are going to use according to the shape you want to give your cake. Use a pastry bag (if you have one) with different hole shapes to let your imagination run wild. Have fun and create different kinds of flowers, roses, leaves, letters and anything you can imagine.

Some recommendations

Take into account these few recommendations when making your cream as well as these few ideas to improve the recipe.

  • Always use the correct amounts of each ingredient. The flavor of your cream depends on it.
  • Avoid mixing in aluminum containers  as these may generate an inappropriate texture. Better to use plastic or glass containers.
  • Sift the cornstarch before adding it  to avoid lumps.
  • It is important that the vanilla essence is added at the end and not when the mixture is on the fire as it can evaporate.
  • You can add many other ingredients to your decorative cream to vary its flavor. For example, you can use butter, orange zest instead of lemon, cinnamon sticks or even add chocolate. The important thing is that it does not override the taste of the cake.
