Finally, leave in the freezer

The good news is that to make this cake, you don’t need to bake it in the oven. Rather, we are going to place the Limon Carlota in the freezer. The minimum exposure time to the cold is 30 minutes, so that the dessert has time to set.

Some people prefer to let the dessert spend an entire day in the refrigerator, thus avoiding the freezer. Both procedures are feasible, although the latter allows better control over the end result. This way, it’s easy to check if the dough is ready, without freezing it too much.

Before serving, you can put a little cinnamon powder. Some people scrape off a little lemon zest and add it to the top of the dessert.  These two additional ingredients enhance the taste and aesthetics of the room, and it is also possible to cover it with whipped cream.

Carlota de limon, a dessert attributed to two queens

Some versions claim that this dessert comes from England, and that it was created during the reign of King George III. According to this story, the dessert is named after his wife, Carlota from Mecklenburg-Strlitz.

A second version indicates that the inventor of the dessert, Marie-Antoine CarĂªme, did so by modifying the recipe for a dessert called charlotte Russe. The Carlota would take its name from that of Tsar Nicolai I’s wife, Charlotte of Prussia.

The two historical figures were contemporaries and dominated the most powerful nations on the planet. You may never know for sure which of the two queens should be given the name of this dessert. The truth is that his life has elevated him, since its inception, to a monarchical status in the world of confectionery.
